Crockpot Marry Me Chicken is a rich and creamy slow cooker dish made with tender chicken breasts, sun-dried tomatoes, garlic, herbs, and Parmesan. It’s the ultimate comforting meal that practically cooks itself and pairs perfectly with pasta, rice, or mashed potatoes.

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 ½ cups chicken broth
  • 3 tablespoons cornstarch
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • 2 tablespoons butter (cut into fourths)
  • ⅓ cup sun-dried tomatoes (drained, in oil)
  • ½ cup Parmesan cheese (freshly grated)
  • Optional: red pepper flakes or cayenne (to taste)

Instructions

  1. In a bowl, whisk chicken broth and cornstarch until smooth.
  2. Add heavy cream, garlic, Italian seasoning, paprika, onion powder, salt, and pepper to the broth. Mix well.
  3. Place the chicken into the crockpot and pour the sauce over it. Top with sun-dried tomatoes and butter.
  4. Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours until the chicken reaches 165°F internally.
  5. Optional: Remove the chicken and blend the sauce for a smoother texture using an immersion blender. Return chicken to the crockpot and stir to coat.
  6. Stir in Parmesan cheese. Let simmer for 5 minutes.
  7. Serve hot over pasta, rice, or mashed potatoes. Garnish with fresh basil and more Parmesan if desired.

Notes

  • Searing the chicken before slow cooking adds extra flavor but is optional.
  • Use oil-packed sun-dried tomatoes for the best flavor and texture.
  • If the sauce is too thin, add a cornstarch slurry near the end of cooking.
  • To store, refrigerate for up to 4 days or freeze for up to 3 months.
