Ingredients

  • 1 lb kielbasa, sliced into rounds
  • 3 cups fresh green beans, trimmed
  • 4 medium red potatoes, cubed
  • 1 medium onion, diced
  • 1 cup low-sodium chicken broth
  • 2 cloves garlic, minced (optional)
  • 1 tsp black pepper
  • Salt to taste
  • Optional: 1 tsp Cajun seasoning or crushed red pepper for spice

Instructions

  1. Slice the kielbasa into rounds and chop the vegetables.
  2. Place cubed red potatoes at the bottom of the crockpot.
  3. Add diced onions and trimmed green beans on top.
  4. Layer the kielbasa slices over the vegetables.
  5. Pour in the chicken broth and season with black pepper, salt, and optional spices.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
  7. Optional: Stir gently and add green beans later in cooking to retain crispness.
  8. Serve warm with your favorite sides.

  • For extra flavor, brown kielbasa in a skillet before adding to the crockpot.
  • Use frozen green beans if fresh are unavailable—add during the last hour.
  • Add a cornstarch slurry if you prefer a thicker broth.
