Crockpot Cilantro Lime Chicken is a flavorful, dump-and-go slow cooker meal made with chicken, tomato sauce, lime, and fresh cilantro. It’s perfect for busy weeknights, meal prep, or serving in tacos, bowls, and more.

Ingredients

  • 3 boneless skinless chicken breasts
  • 1 can (15 oz) tomato sauce
  • 1 bunch cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add chili powder, cumin, garlic salt, salt, pepper, and chopped cilantro over the chicken.
  3. Squeeze fresh lime juice over the top.
  4. Pour tomato sauce evenly over the chicken and spices.
  5. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  6. Once done, shred the chicken using two forks or a mixer.
  7. Stir shredded chicken into the sauce and serve hot.

Notes

  • You can use frozen chicken directly in the crockpot.
  • For extra moisture, add 1/2 cup water if cooking longer than 8 hours.
  • Use a hand mixer for quick and easy shredding.
  • To make it spicier, add crushed red pepper or hot sauce.
  • Freeze uncooked ingredients in a bag for an easy freezer meal.
