Creamy Mexican Street Corn Soup is a rich and comforting soup inspired by classic Mexican street corn. Made with sweet corn, warm spices, creamy broth, and fresh lime, this flavorful soup is perfect for a cozy lunch, dinner starter, or satisfying meal.

  • 4 cups sweet corn kernels (fresh, frozen, or canned)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup milk or light cream
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook for about 4–5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the corn kernels and cook for 3–4 minutes while stirring.
  5. Sprinkle in chili powder and cumin, stirring to coat the corn evenly with the spices.
  6. Pour in the vegetable broth and bring the mixture to a gentle boil.
  7. Reduce the heat and simmer for about 10–15 minutes until the corn becomes tender.
  8. Use an immersion blender to blend part of the soup, leaving some corn whole for texture.
  9. Stir in the milk or cream and add the lime juice.
  10. Season with salt and black pepper, then simmer gently for another 2–3 minutes before serving.

  • Fresh corn provides the best flavor, but frozen corn works well year-round.
  • Blend only part of the soup to keep some corn kernels for texture.
