  • 8 oz cream cheese, cut into cubes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 cup blue cheese dressing (or ranch dressing)
  • 2 cups shredded rotisserie chicken
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese (preferably Kraft Creamy Melt)
  • Chopped chives or green onions, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F and lightly grease a pie dish or baking dish.
  2. In a large saucepan, combine buffalo sauce, cream cheese, garlic powder, onion powder, and dressing over medium-high heat. Stir until smooth.
  3. Add 1 cup of shredded cheddar cheese and stir until melted.
  4. Fold in the shredded rotisserie chicken and mix well.
  5. Pour the mixture into the prepared baking dish.
  6. Top with the remaining 1 cup of cheddar and 1/2 cup of mozzarella cheese.
  7. Bake for 15 minutes, or until bubbly and golden on top.
  8. Garnish with chopped chives or green onions before serving.

Notes

  • Use rotisserie chicken to save time and add flavor.
  • Let ingredients come to room temperature before mixing for better blending.
  • Use freshly shredded cheese for better melting.
  • Add red pepper flakes or chipotle powder for more heat.
  • Pairs well with tortilla chips, crackers, celery, or bread.
  • Store leftovers in the fridge for up to 4 days.
