Cozy Melted Cabbage is a buttery, tender side dish slow-cooked with garlic and onions until soft and flavorful. Simple, comforting, and perfect for weeknight dinners or holiday meals.

  • 1 large head green cabbage, sliced
  • 3 tablespoons butter (or olive oil for dairy-free)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup vegetable or chicken broth (alcohol-free)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • Fresh thyme (optional)
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Squeeze of lemon juice (optional)

Instructions

  1. Remove outer leaves from cabbage, cut in half, remove core, and slice into thin strips.
  2. Melt butter in a large skillet or Dutch oven over medium heat.
  3. Add sliced onion and cook for 4–5 minutes until softened.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add sliced cabbage to the skillet and stir to coat evenly with butter and aromatics.
  6. Season with salt and black pepper.
  7. Pour in broth, cover, reduce heat to low, and cook for 25–30 minutes, stirring occasionally, until cabbage is very tender.
  8. Uncover and cook a few extra minutes if needed to evaporate excess moisture.
  9. Taste and adjust seasoning. Add optional lemon juice or Parmesan before serving.

Notes

  • Cook on low heat to achieve tender, melt-in-your-mouth texture.
  • Uncover near the end if cabbage appears watery.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat gently in a skillet with a splash of broth.
  • For a vegan version, use olive oil and vegetable broth.
