This Cozy German Potato Soup is a vegan twist on the traditional Kartoffelsuppe, made with Russet potatoes, aromatic herbs, and a creamy dairy-free finish. It’s hearty, comforting, and perfect for chilly fall evenings.

  • 1/4 cup vegan butter
  • 1/2 cup yellow onion, diced
  • 1/8 teaspoon liquid smoke
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried marjoram
  • 1 teaspoon caraway seeds
  • 1/4 teaspoon ground black pepper
  • 6 cups vegan chicken-style broth
  • 8 cups Russet potatoes, cut into 1/2-inch cubes
  • 1 bay leaf
  • 3 tablespoons vegan sour cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Set a large pot over medium heat and add vegan butter.
  2. Once melted, add diced onion and cook for 3–4 minutes until translucent.
  3. Stir in liquid smoke, flour, marjoram, caraway seeds, and black pepper. Whisk until fragrant.
  4. Gradually pour in the vegan broth while whisking to avoid clumps.
  5. Add cubed potatoes and bay leaf. Bring to a gentle boil.
  6. Reduce heat to low and simmer for 10–12 minutes until potatoes are fork-tender.
  7. Remove from heat and stir in vegan sour cream until well blended.
  8. Adjust seasoning to taste and garnish with chopped parsley before serving.

Notes

  • Use starchy potatoes like Russets for a creamier texture.
  • For a smoother soup, blend half with an immersion blender.
  • Soup can be frozen for up to 2 months and tastes even better the next day.
