Coffee Pie is a creamy, no-bake dessert infused with rich cold brew flavor and a fluffy whipped filling inside a chocolate cookie crust. Perfect for coffee lovers, it’s easy to make, refreshing, and ideal for any occasion.

  • 1/2 cup cold brew coffee or strong brewed coffee (cooled)
  • 1 (14 oz) can sweetened condensed milk
  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed
  • 1 prepared chocolate cookie or Oreo crust
  • 1 tsp vanilla extract
  • 1 tbsp instant espresso powder (optional for stronger flavor)
  • Pinch of salt
  • Optional toppings: whipped cream, chocolate shavings, espresso powder, caramel drizzle

Instructions

  1. In a large bowl, whisk together cold brew coffee, sweetened condensed milk, vanilla extract, and espresso powder (if using) until smooth and well combined.
  2. Gently fold in the whipped topping using a spatula until fully incorporated and light in texture.
  3. Pour the mixture into the prepared chocolate cookie crust, smoothing the top evenly.
  4. Cover loosely with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.
  5. Before serving, top with whipped cream, chocolate shavings, or a dusting of espresso powder.
