A refreshing tropical twist on the classic mojito, Coconut Rum Mojitos blend coconut rum, mint, lime, and soda for a smooth, creamy, and bubbly summer cocktail perfect for any occasion.

Ingredients

  • 10 fresh mint leaves
  • 3 lime wedges
  • 1 tablespoon simple syrup (or sugar)
  • 2 ounces coconut rum
  • 1 ounce fresh lime juice
  • Club soda (to top)
  • Crushed ice (as needed)
  • Optional: 1 ounce coconut water or cream of coconut
  • Optional: 2 ounces pineapple juice (for variation)
  • Mint sprig and lime wheel (for garnish)

Instructions

  1. Place mint leaves and 2 lime wedges into a tall glass.
  2. Add the simple syrup and gently muddle to release the mint oils without tearing the leaves.
  3. Fill the glass halfway with crushed ice.
  4. Pour in the coconut rum and squeeze in the juice from another lime wedge.
  5. Stir lightly to combine, then top with club soda.
  6. Add more ice until the glass is full and gently stir again.
  7. Garnish with a mint sprig and lime wheel before serving.

Notes

  • Use freshly squeezed lime juice for the best flavor.
  • Adjust sweetness by adding more or less simple syrup.
  • Try coconut water for a lighter version or cream of coconut for a richer taste.
  • To make it non-alcoholic, replace rum with coconut water or syrup.
