  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh lime juice (about 2 limes)
  • 1 teaspoon lime zest
  • 2 tablespoons olive oil, plus more for cooking
  • 3 garlic cloves, minced
  • 1 teaspoon honey (optional)
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder or paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh cilantro and lime wedges, for garnish

Instructions

  1. In a small bowl or blender, whisk together cilantro, lime juice, lime zest, olive oil, garlic, cumin, chili powder, salt, pepper, and honey (if using) until smooth.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over it. Turn to coat evenly. Marinate for at least 30 minutes and up to 8 hours in the refrigerator.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Remove chicken from the marinade, letting excess drip off.
  4. Cook for 5–6 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C). Alternatively, grill for 5–7 minutes per side or bake at 400°F (200°C) for 20–25 minutes.
  5. Let chicken rest for 5 minutes before slicing. Garnish with fresh cilantro and lime wedges before serving.

Notes

  • Use fresh lime juice and cilantro for the best flavor — bottled juice won’t have the same brightness.
  • Don’t over-marinate; the acidity from lime can break down the chicken if left too long.
  • Pound chicken to even thickness for more consistent cooking.
  • For a spicier flavor, add jalapeño or cayenne to the marinade.
  • Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
