Churro Chex Mix is a sweet and crunchy snack made with cereal, cinnamon sugar, and a buttery caramel-like coating. It’s baked to perfection and perfect for parties, gifting, or a fun treat at home.

  • 4 cups Rice Chex cereal
  • 2 cups Cinnamon Toast Crunch cereal
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mix 1/2 cup granulated sugar and 1 1/2 teaspoons cinnamon in a small bowl. Set aside.
  3. In a saucepan over medium heat, melt butter, then stir in brown sugar and corn syrup. Bring to a light boil, stirring constantly.
  4. Remove from heat and stir in vanilla extract.
  5. Place Rice Chex and Cinnamon Toast Crunch in a large mixing bowl. Pour warm syrup over the cereal and toss gently to coat.
  6. Spread the coated cereal evenly on the baking sheet and bake for 10 minutes.
  7. Remove from oven and immediately sprinkle with the cinnamon sugar mixture.
  8. Let cool completely before serving or storing.
