These Christmas Cookie Bars are soft, chewy, and filled with festive red, green, and chocolate M&Ms. Perfect for holiday parties, gifts, or make-ahead treats, they blend classic cookie flavor with a holiday twist.

Ingredients

  • 275g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 1 tsp ground cinnamon
  • 115g unsalted butter, melted
  • 55g granulated sugar
  • 135g light brown sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 200g red/green/brown M&Ms
  • 150g milk chocolate chips

Instructions

  1. Preheat your oven to 190°C (170°C fan) or 375°F. Line a 9×9 inch square baking tin with parchment paper.
  2. In a bowl, whisk together flour, bicarbonate of soda, salt, cornflour, and cinnamon. Set aside.
  3. In a separate bowl, melt the butter. Add granulated sugar and brown sugar, and whisk until smooth (about 2 minutes).
  4. Add the egg and vanilla extract, and whisk again until fully combined.
  5. Fold in the dry ingredients, followed by most of the M&Ms and the chocolate chips. Mix until a thick dough forms.
  6. Press the dough evenly into the prepared tin. Top with remaining M&Ms for decoration.
  7. Bake for 20–25 minutes, until the top appears dry and slightly golden.
  8. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • You can use holiday-themed M&M packs to save sorting time.
  • Replace cinnamon with nutmeg or ginger for a flavor variation.
  • These bars can be frozen for up to 2 months.
  • Microwave briefly before serving for a gooey texture.
