  • 12 oz rotini or bowtie pasta
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup olives, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken sausage, sliced (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente.
  2. Drain and rinse under cold water, then set aside to cool.
  3. Chop tomatoes, cucumber, onion, and olives into small pieces.
  4. In a bowl, mix olive oil, lemon juice, garlic, salt, and pepper.
  5. In a large bowl, combine pasta, vegetables, olives, and feta cheese.
  6. Pour dressing over the salad and toss gently.
