  • 1 large ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse and drain the chickpeas thoroughly and place them in a large mixing bowl.
  2. Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and add them to the bowl with the chickpeas.
  3. Cut the avocado into cubes and gently add it to the mixture.
  4. Sprinkle the crumbled feta cheese and chopped parsley over the salad.
  5. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
  6. Pour the dressing over the salad ingredients.
  7. Gently toss everything together until evenly coated, being careful not to mash the avocado.
