Chewy Brown Sugar Cookies are soft, rich, and full of molasses flavor. Perfectly crisp around the edges and gooey in the middle, these cookies are simple to make and impossible to resist.

Ingredients

  • Brown sugar – provides deep molasses flavor and chewy texture
  • All-purpose flour – gives structure to the cookies
  • Baking soda – helps the cookies rise and spread properly
  • Butter (unsalted) – adds richness and helps create a soft texture
  • Egg – binds the ingredients and contributes to chewiness
  • Vanilla extract – enhances sweetness and adds depth
  • Salt – balances and intensifies the overall flavor
  • Optional add-ins – such as chocolate chips, cinnamon, or nuts for variation

Instructions

  1. Cream butter and brown sugar until fluffy.
  2. Mix in egg and vanilla until fully combined.
  3. Whisk together flour, baking soda, and salt in a separate bowl.
  4. Gradually add dry ingredients to wet mixture until dough forms.
  5. Chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  7. Scoop dough into balls and space on baking sheet.
  8. Bake for 8–10 minutes until edges are golden and centers are soft.
  9. Let cookies chill on baking sheet for 10 minutes before transferring.

Notes

  • Use dark brown sugar for a stronger molasses flavor.
  • Chilling the dough improves texture and prevents spreading.
  • Add cinnamon or espresso powder for flavor variation.
  • Sprinkle sea salt on top before baking for contrast.
  • Freeze dough balls for future baking—just add 1–2 minutes to bake time.
