  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh or frozen cherries, pitted and chopped
  • 1 tablespoon all-purpose flour (for tossing cherries)
  • 1 tablespoon lemon zest
  • 3/4 cup milk or heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  4. Toss chopped cherries with 1 tablespoon flour, then gently mix them into the dough along with lemon zest.
  5. Add milk and vanilla extract, stirring just until the dough comes together.
  6. Turn the dough out onto a lightly floured surface and gently pat it into a round disc.
  7. Cut the dough into wedges and place them on the prepared baking sheet.
  8. Bake for 15 to 18 minutes, until the scones are lightly golden on top.
  9. Remove from the oven and allow to cool slightly before serving.
