A creamy, hearty Cheeseburger Soup loaded with ground beef, melted cheddar cheese, potatoes, and vegetables in a rich, comforting broth. This easy one-pot meal brings all the flavors of a classic cheeseburger into a warm, spoonable dish perfect for any family dinner.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 cup shredded sharp cheddar cheese
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 3 cups chicken or beef broth
  • 1 cup milk or heavy cream
  • 3 tbsp butter
  • 3 tbsp all-purpose flour (or 2 tbsp cornstarch for gluten-free)
  • Salt and pepper, to taste
  • Optional: 4 slices cooked bacon, crumbled
  • Optional toppings: shredded cheese, chopped green onions, croutons

Instructions

  1. In a large pot, brown the ground beef over medium-high heat until no longer pink. Drain excess grease and set aside.
  2. In the same pot, melt butter and sauté onions, carrots, celery, and garlic until softened, about 5 minutes.
  3. Add diced potatoes and pour in broth. Simmer until the potatoes are tender, about 10–12 minutes.
  4. In a separate bowl, whisk together flour and milk (or cream) until smooth, then stir it into the soup. Cook for 5 minutes until thickened.
  5. Reduce the heat to low and return the cooked beef to the pot. Stir in shredded cheese gradually until melted and creamy.
  6. Season with salt and pepper to taste. Avoid boiling the soup after adding cheese.
  7. Ladle into bowls and garnish with extra cheese, green onions, or crumbled bacon. Serve warm with bread or salad.

Notes

  • Add cheese off the heat to prevent curdling and maintain a smooth texture.
  • For a thicker consistency, mash a few potatoes directly in the pot.
  • To freeze, omit cheese and cream until reheating.
  • Use ground turkey or chicken for a lighter version.
  • For gluten-free diets, use cornstarch instead of flour.
