6 fresh apricots, halved and pitted
1/4 cup unsalted butter (for caramel layer)
1/2 cup brown sugar
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
Instructions
Preheat oven to 350°F (175°C) and grease a round cake pan.
Melt 1/4 cup butter in the pan and sprinkle brown sugar evenly over it.
Arrange apricot halves over the caramel mixture.
In a bowl beat softened butter and sugar until fluffy.
Add eggs one at a time and mix well.
Stir in vanilla extract.
In another bowl combine flour and baking powder.
Gradually mix the dry ingredients into the batter alternating with milk.
Pour the batter over the apricots and spread evenly.
Bake for 35–40 minutes until a toothpick inserted comes out clean.
Cool for 10 minutes then invert onto a serving plate.
Notes
Use ripe but firm apricots for best results.
Flip the cake while it is still warm to prevent sticking.
Add cinnamon or almond extract for extra flavor.
Store leftovers in an airtight container for up to 3 days.
