These Cake Mix Cookies are the ultimate 3-ingredient treat. Soft, chewy, and endlessly customizable, they come together in under 30 minutes using just cake mix, eggs, and oil. Perfect for holidays, parties, or a quick dessert fix.

Ingredients

  • 1 (15.25 oz) box cake mix (any flavor)
  • 2 large eggs
  • 1/2 cup vegetable oil (or 7 tbsp melted butter)
  • Optional: 1 cup mix-ins (e.g., chocolate chips, M&M’s, Rolos, chopped nuts)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix cake mix, eggs, and oil until a smooth dough forms.
  3. If dough is sticky, refrigerate for 15–30 minutes for easier handling.
  4. Scoop dough onto the prepared baking sheet, spacing each scoop about 2 inches apart.
  5. Add any optional mix-ins to the top or fold into the dough before baking.
  6. Bake for 9–11 minutes or until the edges are set but centers are still soft.
  7. Cool on the baking sheet for 2 minutes, then transfer to a wire rack.

Notes

  • Do not overbake—cookies should not brown.
  • Use parchment paper to prevent browning on the bottom.
  • Add 2 tablespoons flour if using a cake mix smaller than 15 oz.
  • Freeze baked cookies for up to 3 months.
  • Store at room temperature in an airtight container for up to 3 days.
