  • 24 frozen tart shells, defrosted

Instructions

  1. Preheat oven to 375°F (190°C) and place tart shells on a rimmed baking sheet.

  3. Add beaten eggs, lemon juice, and vanilla extract. Stir well to combine.
  4. Fold in chopped pecans and raisins.
  5. Spoon filling into tart shells, leaving about 1/4 inch of space at the top.
  6. Bake for 12–15 minutes, until the tops are golden and the filling is bubbling.
  7. Remove from oven and cool in the pan for 10 minutes before transferring to a wire rack.
  8. Serve warm for a gooey center or at room temperature for a firmer texture.
