These no-bake Buckeye Bars combine creamy peanut butter and rich chocolate in an easy-to-make dessert that’s perfect for holidays, gifting, or snacking.

Ingredients

Scale
  • ½ cup (113 grams) butter, softened
  • 2 cups (480 grams) creamy peanut butter
  • 3½ cups (420 grams) powdered confectioners sugar
  • 1½ teaspoons (7 ml) vanilla extract
  • 2 cups (360 grams) chocolate chips or chunks (12 ounces)
  • 1 tablespoon (14 g) butter or coconut oil

Instructions

  1. In a large bowl, beat together softened butter, peanut butter, powdered sugar, and vanilla extract until smooth and thick.
  2. Line a 9×13-inch pan with parchment paper. Press the peanut butter mixture firmly and evenly into the bottom of the pan.
  3. Melt chocolate chips and 1 tablespoon of butter in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  4. Pour the melted chocolate over the peanut butter layer and spread evenly using a spatula.
  5. Let sit at room temperature for 45–60 minutes to partially set, or refrigerate for 15–20 minutes.
  6. Cut into squares or desired shapes before the chocolate fully hardens to avoid cracking.
  7. Store in the refrigerator for up to a month or freeze for longer storage.

Notes

  • Use regular creamy peanut butter; avoid natural or homemade types for best texture.
  • Choose low-water-content butter (like Aldi or Great Value) to ensure firmness.
  • Cut bars before chocolate fully sets to prevent cracking.
  • Bars can be frozen for up to 4 months if wrapped and stored properly.
  • Optional: Add Rice Krispies, graham cracker crumbs, or sweetened condensed milk for variations.
