Broccoli Pasta Salad is a creamy and refreshing dish made with tender pasta, fresh broccoli, colorful vegetables, and a flavorful dressing. Perfect for picnics, potlucks, and family meals.

  • 12 oz rotini pasta
  • 2 cups fresh broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 bell pepper, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the rotini pasta according to the package instructions until al dente.
  2. Drain the pasta and rinse it under cold water to cool completely.
  3. Wash the broccoli and cut it into small bite-sized florets.
  4. In a large bowl, combine the cooled pasta, broccoli, cherry tomatoes, red onion, and diced bell pepper.
  5. In a separate bowl, whisk together mayonnaise, sour cream or yogurt, lemon juice, garlic powder, salt, and black pepper.
  6. Pour the dressing over the pasta and vegetables.
  7. Gently toss the mixture until everything is evenly coated.
  8. Cover and refrigerate the salad for 30–60 minutes before serving.
  9. Stir the salad again before serving and adjust seasoning if needed.

  • Cut broccoli into small pieces for better mixing.
  • Allow pasta to cool completely before adding dressing.
  • Add grilled chicken or chickpeas for extra protein.
