Blueberry Lemonade Concentrate is a sweet and tart homemade drink base made with fresh blueberries and lemon juice. Preserved using safe water bath canning, this vibrant concentrate is perfect for refreshing summer drinks year-round.

  • 6 cups fresh or frozen blueberries
  • 4 cups freshly squeezed lemon juice (about 1620 lemons)
  • 6 cups granulated sugar
  • 6 cups water, divided
  • Optional: 1 tablespoon lemon zest

Instructions

  1. Wash and sort blueberries, removing stems or damaged fruit.
  2. Place blueberries in a large pot with 2 cups of water and bring to a gentle simmer for 10–15 minutes until berries burst.
  3. Strain the mixture through a fine mesh strainer or cheesecloth, pressing gently to extract juice. Discard solids.
  4. Return blueberry juice to the pot and add lemon juice and remaining 4 cups of water.
  5. Stir in sugar and optional lemon zest. Heat over medium, stirring until sugar fully dissolves.
  6. Do not boil vigorously; heat just until combined and hot.
  7. Sterilize jars and keep warm. Heat lids in warm water.
  8. Ladle hot concentrate into jars, leaving 1/4 inch headspace.
  9. Remove air bubbles, wipe rims clean, and secure lids fingertip tight.
  10. Process jars in a boiling water bath for 10 minutes (adjust for altitude if necessary).
  11. Remove jars and cool undisturbed for 12–24 hours. Check seals before storing.

Notes

  • Always ensure proper acidity by using fresh or properly bottled lemon juice.
  • Concentrate should taste slightly strong since it will be diluted when serving.
  • Store sealed jars in a cool, dark place for up to 12 months.
  • Refrigerate after opening and use within 2–3 weeks.
  • To serve, mix 1 part concentrate with 3 parts water or sparkling water.
