Blueberry cheesecake bars are creamy dessert squares with a buttery crust, smooth cheesecake layer, and a sweet blueberry swirl, perfect for easy serving and gatherings.

  • 2 cups crushed graham crackers or cookies
  • 1/2 cup melted butter
  • 8 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups blueberries (fresh or frozen)
  • 1/3 cup sugar (for topping)
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking pan with parchment paper.
  2. Mix crushed graham crackers with melted butter and press into the pan to form the crust.
  3. Bake crust for 8–10 minutes and let cool.
  4. Beat cream cheese until smooth, then add sugar and mix well.
  5. Add eggs one at a time, mixing gently, then add vanilla extract.
  6. Pour filling over the cooled crust and spread evenly.
  7. Cook blueberries with sugar and lemon juice until slightly thickened, then cool.
  8. Spoon blueberry mixture over filling and swirl gently.
  9. Bake for 30–35 minutes until center is set.
  10. Cool completely, then refrigerate for 3–4 hours before cutting into bars.

  • Use room temperature cream cheese for a smooth batter.
  • Do not overmix to avoid cracks.
  • Allow proper chilling before slicing for clean bars.
  • Use well-drained blueberries if frozen.
  • Store in the refrigerator for up to 5 days or freeze for longer storage.
