This Blueberry Breakfast Quesadilla is a quick, 3-ingredient breakfast that’s crispy, sweet, and packed with antioxidants—perfect for busy mornings.

Ingredients

  • 1 large light tortilla or Flatout wrap
  • 2 wedges of The Laughing Cow Cinnamon Cream Cheese Spread
  • 1/2 cup frozen blueberries

Instructions

  1. Heat a nonstick skillet over medium-high heat.
  2. Smear the cream cheese on one half of the tortilla.
  3. Top evenly with blueberries.
  4. Fold the tortilla in half to close.
  5. Spray the skillet with nonstick cooking spray.
  6. Place the quesadilla in the skillet and cook for 2 minutes per side until golden and crisp.
  7. Remove from skillet, cut into wedges, and serve warm.

Notes

  • Do not overfill to avoid leaking.
  • Frozen blueberries work best for texture, but fresh can be used.
  • If you can’t find cinnamon cream cheese, mix regular cream cheese with cinnamon and vanilla.
