  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 1 tablespoon oil (for vegetables)
  • Flour or corn tortillas (for serving)

Instructions

  1. In a bowl, whisk together olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
  2. Coat the steak evenly with the marinade and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat the Blackstone griddle to medium-high heat (about 400–450°F) and lightly oil the surface.
  4. Add sliced bell peppers and onions to the griddle with 1 tablespoon oil. Cook for 5–7 minutes until tender-crisp and lightly charred. Move to the side to keep warm.
  5. Place the marinated steak on the hottest part of the griddle. Cook undisturbed for 3–4 minutes per side until desired doneness.
  6. Remove steak from the griddle and let rest for 5–10 minutes.
  7. Slice the steak thinly against the grain.
  8. Return sliced steak to the griddle with the vegetables and toss together for 1–2 minutes.
  9. Warm tortillas on the griddle for 20–30 seconds per side.
  10. Serve steak and vegetables in warm tortillas with desired toppings.
