  • 2 tablespoons hot honey

  • 1/2 teaspoon garlic powder

  • 4 large flour tortillas
  • 2 cups shredded mozzarella or cheddar cheese
  • 1 tablespoon butter or oil (for griddle)
  • Optional: sliced red onion, fresh cilantro, sour cream

Instructions

  1. Preheat the Blackstone griddle to medium heat (375–400°F) and lightly oil the surface.
  2. In a bowl, mix shredded chicken, barbecue sauce, hot honey, smoked paprika, garlic powder, salt, and black pepper until well combined.
  3. Warm tortillas on the griddle for 20–30 seconds per side.
  4. Sprinkle cheese evenly over half of each tortilla.
  5. Add a layer of the hot honey BBQ chicken mixture over the cheese.
  6. Top with additional cheese and fold the tortilla in half.
  7. Cook each quesadilla for 2–3 minutes per side until golden brown and crispy.
  8. Remove from the griddle, let rest briefly, slice into wedges, and serve.
