  • 2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon unsalted butter
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 zucchini, sliced (optional)
  • 1 cup sliced mushrooms (optional)
  • 1 cup chopped onions

Instructions

  1. Preheat the Blackstone griddle to medium-high heat.
  2. Add vegetable oil to the hot griddle and spread evenly.
  3. Place the chicken pieces in a single layer on the griddle. Season with salt and black pepper.
  4. Cook undisturbed for 2–3 minutes to develop a golden sear, then flip and cook another 3–4 minutes until fully cooked (internal temperature 165°F).
  5. Add minced garlic to the griddle and mix it into the chicken. Drizzle soy sauce and sesame oil over the chicken.
  6. Add butter and toss everything together until melted and evenly coated.
  7. If using vegetables, cook them alongside the chicken until tender and lightly browned.
  8. Remove from heat and serve immediately with rice or vegetables.
