  • 1 (3 to 4 pound) corned beef brisket with seasoning packet
  • 4 garlic cloves, smashed
  • 1 large onion, sliced
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 2 cups water or low-sodium beef broth

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Rinse the corned beef brisket under cold water to remove excess surface salt. Pat dry.
  3. Place brisket fat side up in a roasting pan or Dutch oven.
  4. Sprinkle the included seasoning packet over the top of the brisket.
  5. Add sliced onion, garlic, bay leaves, and peppercorns around the meat.
  6. Pour water or beef broth into the pan until about 1 inch deep, without fully submerging the brisket.
  7. Cover tightly with foil or a lid.
  8. Bake for 2 1/2 to 3 hours, or about 45 to 50 minutes per pound, until fork tender and internal temperature reaches 195 to 205°F.
  9. Remove from oven and let rest for 15 minutes before slicing.
  10. Slice against the grain and serve warm.
