Asian Cucumber Salad is a crisp, refreshing, and flavor-packed salad made with smashed cucumbers tossed in a savory, tangy, and slightly spicy Asian-style dressing. It is quick to prepare and perfect as a light side dish or appetizer.

  • 4 Persian or mini cucumbers
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon chili oil or chili flakes (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons sliced green onions (optional)

Instructions

  1. Wash the cucumbers and trim the ends.
  2. Place cucumbers on a cutting board and lightly smash them using the flat side of a knife or rolling pin.
  3. Cut the smashed cucumbers into bite-sized pieces.
  4. Lightly salt the cucumbers and let them rest for 10 minutes, then pat dry.
  5. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, chili oil, and garlic.
  6. Add the cucumbers to a large bowl and pour the dressing over them.
  7. Toss gently until well coated.
  8. Garnish with sesame seeds and green onions before serving.
