  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup cold butter, cubed
  • 1/4 teaspoon salt
  • 1/3 cup chopped almonds or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. Wash the apricots, remove the pits, and slice them into halves or quarters.
  3. In a mixing bowl combine the apricots, granulated sugar, lemon juice, and cornstarch.
  4. Stir until the fruit is evenly coated, then transfer the mixture to the prepared baking dish.
  5. In another bowl mix rolled oats, flour, brown sugar, cinnamon, and salt.
  6. Add the cold butter pieces and use a fork or pastry cutter to blend until the mixture becomes crumbly.
  7. Stir in chopped nuts if using.
  8. Sprinkle the oat crumble evenly over the apricot filling.
  9. Bake for 35–40 minutes until the topping is golden brown and the fruit filling is bubbling.
  10. Allow the crisp to cool for about 10–15 minutes before serving.
