  • 1 teaspoon baking powder

  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped dried apricots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon orange zest (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. If using dried apricots, chop them into small pieces and soak them briefly in warm water to soften if needed.
  3. In a mixing bowl whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl beat the eggs, sugar, milk, oil, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold the chopped apricots and optional nuts into the batter.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then transfer to a cooling rack.
  10. Slice and serve once the bread has completely cooled.
