Apricot Bliss Balls are easy no-bake energy bites made with dried apricots, oats, nuts, and coconut. These naturally sweet snacks are perfect for healthy meal prep, quick snacks, or lunchbox treats.

Ingredients

  • 1 1/2 cups dried apricots
  • 1 cup rolled oats
  • 1/2 cup almonds or cashews
  • 1/2 cup shredded coconut (plus extra for coating)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon flaxseeds (optional)
  • 12 tablespoons warm water if needed

Instructions

  1. If the dried apricots are firm, soak them in warm water for about 5 minutes and drain well.
  2. Add the dried apricots, oats, almonds, coconut, honey, and vanilla extract to a food processor.
  3. Blend the mixture until it forms a sticky dough-like consistency.
  4. If the mixture seems too dry, add a small amount of warm water and blend again.
  5. If it is too sticky, add a little more oats.
  6. Scoop small portions of the mixture and roll them into bite-sized balls using your hands.
  7. Roll each ball in shredded coconut to coat the outside.
  8. Place the balls on a plate or tray and refrigerate for 30 minutes to firm up.
  9. Once chilled, store in an airtight container or serve immediately.

Notes

  • Soft dried apricots blend more easily and create a smoother texture.
  • You can replace almonds with sunflower seeds to make the recipe nut-free.
  • For extra flavor, add orange zest or a pinch of cinnamon.
  • Apricot Bliss Balls can be stored in the refrigerator for up to 1 week.
  • They can also be frozen for up to 3 months for longer storage.
