Scale
  • 6 small flour tortillas (4-6 inch)
  • 3 tbsp melted butter
  • 1/3 cup granulated sugar
  • 1 tsp ground cinnamon
  • 3 medium apples (Granny Smith or Honeycrisp), peeled and diced
  • 2 tbsp lemon juice
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp butter
  • Optional: whipped cream, caramel sauce, vanilla ice cream, chopped nuts

Instructions

  1. Cut tortillas into smaller circles using a round cutter (optional).
  2. Brush both sides of tortillas with melted butter and coat in cinnamon-sugar mixture.
  3. Shape into taco form using oven racks or a baking pan edge.
  4. Bake at 375°F for 5–7 minutes or fry until golden brown; set aside to cool.
  5. In a skillet, melt 1 tbsp butter and add diced apples. Sauté for 2–3 minutes.
  6. Add sugars, cinnamon, nutmeg, and lemon juice. Cook until soft.
  7. Add cornstarch slurry and stir until thickened and glossy.
  8. Spoon apple filling into taco shells.
  9. Top with whipped cream, caramel, nuts, or ice cream as desired.

Notes

  • Use tart apples like Granny Smith for best flavor balance.
  • To make ahead, store taco shells and filling separately.
  • Filling can be made 1–2 days in advance and refrigerated.
  • Bake or air fry shells for a lighter version.
