  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup finely diced apple (e.g., Granny Smith or Honeycrisp)

Instructions

  1. Peel and finely dice the apple. Pat it dry and toss with cinnamon and nutmeg. Set aside.
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract; whisk until combined.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Stir dry ingredients into the wet mixture until just combined.
  6. Fold in oats, then add the diced apple mixture. Do not overmix.
  7. Chill the dough for 30 minutes (optional but recommended for best texture).
  8. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  9. Scoop 2-tablespoon portions of dough onto the baking sheet, spacing them apart.
  10. Bake for 12–14 minutes until edges are golden and centers appear slightly soft.
  11. Let cool on the tray for 5 minutes before transferring to a wire rack.

  • Chilling the dough helps with flavor and prevents overspreading.
