These Almond Joy Cookies are soft, chewy, and packed with rich coconut, slivered almonds, and semi-sweet chocolate chips. Inspired by the classic candy bar, they’re easy to make and perfect for any occasion.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons coconut extract
  • 1 to 2 teaspoons almond extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • Pinch of salt (optional)
  • 1 cup sweetened shredded coconut
  • 1 cup slivered almonds
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a large mixing bowl, beat together butter, brown sugar, granulated sugar, egg, coconut extract, and almond extract until creamy, about 4 minutes.
  2. Scrape down the sides, then add flour, cornstarch, baking soda, and optional salt. Mix until just combined.
  3. Fold in shredded coconut, slivered almonds, and chocolate chips.
  4. Using a scoop or your hands, form about 13 equal dough balls and flatten slightly.
  5. Place dough balls on a tray, cover with plastic wrap, and chill in the refrigerator for at least 2 hours (or up to 5 days).
  6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  7. Place dough balls on the baking sheet, spaced 2 inches apart. Bake for 10–11 minutes until edges are set and centers look slightly underdone.
  8. Allow cookies to cool on the baking sheet for 10 minutes before serving.

  • Chilling the dough is essential for preventing spread and ensuring a chewy texture.
  • Cookies will look pale and slightly glossy in the center when done but will firm up as they cool.
  • Store cookies in an airtight container at room temperature for up to 1 week or freeze for longer storage.
  • Dough can be stored chilled for up to 5 days or frozen up to 4 months.
